Food Friday: Mommy's Sarawak Laksa

It's been a while since I posted anything in my Food Friday segment. The last entry was about the Sup Gearbox which was wayyyy back in March!

Considering how much I love eating, it's a wonder why I don't post about Food Friday more often. Anyways, this week, I'm going back to my roots. My Sarawakian roots, that is. I'm half Iban, by the way -- for those of you who don't know. I come from a long line of scary headhunters. Yes, I do. LOL!

So like most Sarawakians, my mom is a WONDERFUL cook. I know most kids say that about their mom and I hope that by default, my kids will be saying the same thing about me one day. But seriously, my mom is a great cook and this Raya, she made her spectacular Sarawak Laksa!

Mommy's Sarawak Laksa

Sarawak Laksa is actually very different from the curry laksa as the soup contains no curry at all. It has a base of Sambal belacan, sour tamarind, garlic, galangal, lemon grass and coconut milk. It is then topped with omelette strips, chicken strips, whole prawns, fresh coriander and optionally lime. Ingredients such as bean sprouts, (sliced) fried tofu or other seafood are not traditional but are sometimes added.

My sisters and I helped my mom in the kitchen to see how she makes it, but I doubt any of us can still make it as good as she does. To say it was SCRUMPTIOUSLY DELICIOUS is an understatement! I daresay it's as good if not better than the uncle's Sarawak Laksa behind the old Rex cinema in Kuching last time. No joke!! Dunno where that uncle moved to already.. must be his children took over already and maybe doesn't taste as good anymore.

I'm not really big on laksas, actually. But I love food so much that I know a good one when I taste one. I like bean sprouts, but only when they're blanched correctly, making it cooked but crunchy without that sprout-y taste and smell. And the sambal that goes with it, *drool* so HOT and PERFECT.

Honest to gosh, I had about 4-5 bowls of my mom's laksa throughout that whole day.. because not only was it delicious, and the fact that I was super greedy, but it was also a rare occasion! My mom hasn't made her Sarawak Laksa in over 10 YEARS!

So I'm not just gonna settle with one bowl and have that last me for another 10 years. No way jose!! I'm not the only one singing my mom's praises, too. My mom's friends would vouch for it too. The moment they sat at the dining table, they didn't want to get up! LOL! :)

So mommy, thanks for making your wonderful Sarawak Laksa this Raya even though you were tired and not feeling so well. I love you!
