Shemzo's Meatloaf and Mashed Potatoes Recipe

Preparation: 15 mins
Cooking time: 45 mins


Mashed Potatoes

Ingredients:
  1. 1/2 kg of Potatoes
  2. Salt
  3. Butter
Steps:
  • Skin potatoes and cut them into quarters.
  • Boil them
  • Once soft, strain potatoes and put inside a bowl (where you can mash it).
  • Put in the butter while the potatoes are still hot so that it can melt and be mashed easily.
  • Use as much/as little butter as you like. The taste should be according to how you want it to taste like. Buttery or less buttery.
  • Mash mash mash.
  • Add salt.
  • Taste. Yum-O!!!
Shemzo's Meatloaf

Ingredients:
  1. 1kg minced beef (fresh, not frozen)
  2. 1 large onion, chopped
  3. 1 egg, scrambled (not cooked version ok?)
  4. 1/2 cup ketchup
  5. 1/4 cup breadcrumbs
  6. 4 tbsp of Worcestershire sauce
  7. 2 tbsp of dark soy sauce
  8. salt
  9. black pepper
  10. 2 tsp of Oregano spice
  11. 2 tsp brown sugar or 1/3 cup of evaporated milk (optional)
  12. 3 hard boiled eggs
  13. some melted butter
Steps:
  • Mix 1-11 in a big bowl.
  • Take 1/3 of the meat and place it on a glass dish (like something you'll cook lasagna in).
  • Place the 3 hard boiled eggs vertically along the top of the 1/3 layer of meat.
  • Take the rest of the meat and put it on top of the eggs. Cover it and the neatly shape it into what looks like a loaf of bread.
  • Put it in the oven at 180°C. Bake for 30-35 minutes.
  • Take it out of the oven, drain the oil. (Don't throw it, keep it aside). The meatloaf by this time will shrink a little.
  • Lather your meatloaf all over with the mashed potatoes.
  • Baste the meatloaf (now covered in mashed potatoes) with melted butter.
  • Put it in the oven for another 10-15 minutes until it becomes golden-y yellow.
Gravy
  • Put the remainder of the oil in a saucepan.
  • Thicken it with flour.
  • Add seasoning or water IF needed. (salt/pepper)
or
  • Buy "Western Family" beef gravy.
  • Heat it up.
  • Serve. :D
Taddaaaa!! All done!! For the mashed potatoes, you can add an egg, cream cheese or double whipped cream in it. It all depends on how "rich" and "fattening" you want it to be. If you don't want it all over your meatloaf, you can also just serve it as a side dish.

Also, if you want a quicker way of eating your "meat", you can just shape the meat into burger patties and grill them or cook them as you would cook a burger. Makes a good homemade burger too! Yum Yum!

Another tip, don't follow the exact measurements. Follow your sense of smell.. like Ratatouille!! I mean the measurements is just a guideline. You can add more, as long as you don't add like a whole bottle of ketchup or soy sauce.

cindy: You're most welcome! hahaha.. ala, that 1 point of skill tu pun is just for chopping up the onions. Haha!

Ya! I pun wanted to post a pic!! Susah bah kalau orang ndak camwhore ni. Hehehehe. Nanti I korek2 my old photos and see whether I pernah take a pic of my meatloaf or not. OR the next time i make, i load the photo here. :-) Sorry again!
